果糖基转移酶(Fructosyltransferase, EC 2.4.1.9),也称b-呋喃果糖苷酶(b- Fructo-furanosidase, EC 2.4.1.26),为一种水解酶,具有转移活力及广泛的受体活性,能以蔗糖为原料,合成蔗果三糖等低聚糖。蔗果低聚糖又称为低聚果糖(FOS),是一种优良的食品配料,具有益生元生理功效。低聚果糖主要为蔗果二糖,还含有蔗果三糖和蔗果四糖。
Fructosyltransferase (EC 2.4.1.9) , also known as b-Fructo-furanosidase (EC 2.4.1.26) , is a kind of glycosyltransferase enzyme, synthesis of sucrose and fruit trisaccharides and other oligosaccharides. Sucrose fruit oligosaccharides, also known as fructooligosaccharides (Fos) , is an excellent food ingredient with prebiotic physiological effects. Fructooligosaccharides are mainly sucrose disaccharides, but also contain sucrose trisaccharide and sucrose trisaccharide.
