This product is Dexteanase (EC 3.2.1.11) , also known as α-glucanase. It is produced by the purification and extraction of the strain through submerged fermentation. The enzyme is mainly responsible for the degradation of α-1 in Dextran (α-glucan) , 6-glucoside bond, so that the chain of dextran shortened, molecular weight reduction.
