脂肪酶

脂肪酶(Lipase,甘油酯水解酶)隶属于羧基酯水解酶类，能够水解长链脂肪酸、三酰甘油等物质。脂肪酶能催化甘油三酯水解成甘油二酯、甘油单酯、甘油和游离脂肪酸。在无水条件下发生逆向合成反应，酶能在酯化、醇解和酯交换反应下合成新的分子。所有反应均能在温和的条件下表现出很高的区域选择性和对映体选择性。
